This type of plow is also referred to as a "ridge plow" because it created ridges on either side of a central ditch. It was used to unearth potatoes and other root crops and to create the slightly elevated ridges along which such crops are planted. Such a plow was only practical for a farmer specializing in such crops since all farmers would require a traditional plow as well.
