Baked beans made a tasty, easy meal perhaps most commonly prepared on Saturday, baking day, using the residual heat of the wall oven after a morning of bread baking. Long slow cooking of the beans is essential for good flavor. First soaked overnight, and then combined with molasses, dry mustard, onion, and salt pork the baked beans would provide the family with a Saturday night treat, warm from the oven.
